May the Schwartz be with you


I feel cosmic lately. Like my third eye is 20/20. Is that a side effect of motherhood? I don’t mean eyes in the back of my head, I mean more in tune with people…maybe it’s what they call empathy.

We were reflecting on parenthood tonight with a couple of kindred spirits who are in the process of conception. Not like Monty Python styles in the restaurant, but planning baby as much as something so magical can be planned. And I’ve concluded (back me up mom’s) that I’m more in tune: that the 10% of my processing brainpower has actually multiplied and my reflexes have quickened.
I suppose scientific types could attribute these feelings to something else – like relativity to my pregnancy vibe. But I say, I’ve changed.

Daddy C will back me up on this.

Inspired by Valentine’s Day, our music play date today consisted of the lovely Colleen organizing a cookie decorating, card making session. As Hallmark as the elusive Saint’s day is, it’s appropriate for how I’ve been feeling lately. One of my best friends sent me this Shakespeare quote: "there are greater things in the heavens and the earth than are dreamt of in your mythology".

Foodie Friday - Turkey Meatloaf

Here is a recipe for finger food (thanks to the fabulous Julia!) that Little E can’t seem to get enough of - since she’ll only eat things she can hold.
p.s. (I substituted the egg for flax substitute - 1 TBS of ground flax, 3 TBS of water mix and let sit for a few mins. And I substituted breadcrumbs for cooked quinoa)

Ingredients:

1 lb ground turkey

1 whole egg or 2 egg yolks, beaten 

½ cup pureed carrots
(or grated)
¼ cup applesauce

¼ cup unprocessed natural wheat or oat bran

¼ cup bread crumbs
pinch of basil
pinch of garlic powder

Directions:
Place ground turkey in a large mixing bowl. Add the egg/yolk, carrots, applesauce, spices, breadcrumbs and bran. Mix well - If this mixture appears too dry, add more carrots or applesauce. If this mixture appears too wet, add more bran and/or breadcrumbs.
Place mix into a lightly oiled (olive oil) loaf pan and bake at 350F for approx. 45 minutes or until an inserted knife comes out clean. **You may wish to cover with foil to prevent the top from burning
When finished baking and cooled, remove loaf from pan and slice as you would for bread. Break into small bits for finger feeding or Mash or chop gently
This recipe may also be made into "Turkey Sticks" for Toddlers and older babies who are able to handle more textured/chunky finger foods.
